Ingredients

  • 2-4 chicken breasts, cubed
  • 2 tbsp cornstarch
  • 1/3 cup Sun River Honey Chipotle Honey
  • 2 tbsp vegetable oil
  • 1 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1/3 cup chicken stock
  • 1 tbsp rice vinegar
  • 1 tbsp soy sauce
  • Salt and pepper, to taste

Directions

  1. Place the chicken cubes in a bowl. Add the cornstarch, salt, and pepper, and toss until the chicken is fully coated.
  2. Heat the oil in a large frying pan over medium-high heat.
  3. Add the chicken and cook until golden brown.
  4. Add the butter to the pan and let it melt. Add the garlic and stir together. Turn the heat down to medium so the garlic does not burn.
  5. In a bowl, stir together the Chipotle Honey, chicken stock, rice vinegar, and soy sauce.
  6. Add the sauce to the pan. Turn the heat up and bring the sauce to a boil, then simmer until the sauce reduces and thickens and the chicken is cooked through.
  7. Serve with rice or ramen noodles to make noodle bowls.

Recipe Notes

Shelbie mentioned that you can make just the sauce, reduce it down, and use it as a chicken wing sauce. Awesome idea!
