Sara's Turmeric Ginger Honey muffins are a family favourite with the grandkids. They bake up bright yellow, lightly sweet, and easy to serve on their own or with a little butter and honey on top.
Ingredients
- 2 cups all-purpose white flour
- 3 tsp baking powder
- 1/2 tsp salt
- 1 large egg
- 1 cup milk
- 1/4 cup melted butter
- 1/2 cup Turmeric Ginger infused Sun River Honey
Directions
- Preheat the oven to 375 degrees F.
- Line 12 muffin cups with large or jumbo paper muffin cups for easier cleanup.
- Measure and blend the flour, baking powder, and salt in a large mixing bowl.
- Gently melt the butter in the microwave in 20-second increments until melted, about 40 to 60 seconds total.
- Lightly grease the inside of a 1/2 cup measuring cup with oil or butter so the honey releases more easily.
- Measure 1/2 cup Turmeric Ginger infused Sun River Honey into the greased measuring cup, then add it to the melted butter and stir until thoroughly blended.
- Lightly beat the egg and milk together with a fork.
- Add the milk, egg, and honey-butter mixture to the dry ingredients, stirring just until nicely blended.
- Fill the muffin cups 3/4 full and bake on the center rack for 18 to 20 minutes.
- Cool on a wire rack before storing or freezing.
