Ingredients

  • 2 cups all-purpose white flour
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 1 large egg
  • 1 cup milk
  • 1/4 cup melted butter
  • 1/2 cup Turmeric Ginger infused Sun River Honey

Directions

  1. Preheat the oven to 375 degrees F.
  2. Line 12 muffin cups with large or jumbo paper muffin cups for easier cleanup.
  3. Measure and blend the flour, baking powder, and salt in a large mixing bowl.
  4. Gently melt the butter in the microwave in 20-second increments until melted, about 40 to 60 seconds total.
  5. Lightly grease the inside of a 1/2 cup measuring cup with oil or butter so the honey releases more easily.
  6. Measure 1/2 cup Turmeric Ginger infused Sun River Honey into the greased measuring cup, then add it to the melted butter and stir until thoroughly blended.
  7. Lightly beat the egg and milk together with a fork.
  8. Add the milk, egg, and honey-butter mixture to the dry ingredients, stirring just until nicely blended.
  9. Fill the muffin cups 3/4 full and bake on the center rack for 18 to 20 minutes.
  10. Cool on a wire rack before storing or freezing.

Recipe Notes

These muffins can be served on their own or with light margarine or butter. For an extra turmeric-ginger honey finish, spread a little Turmeric Ginger infused Sun River Honey on a fresh muffin as a topping or glaze.

I made these. They aren’t bad but they lacked a lot of flavour. Great if you don’t like it too sweet. I added some honey or jam and enjoyed with tea.

Infused Honey seems to be a miracle ingredient for baking

Merci encore
