Sherry works with us in the honey plant, and this was her idea: cinnamon rolls filled with Cinnamon Sun River Honey. As they bake, the honey oozes out the bottom and makes its own glaze.

Ingredients

  • 1 cup warm milk
  • 1/2 cup plus 1 tablespoon sugar, divided
  • 1 tablespoon active dry yeast
  • 2 large eggs, room temperature
  • 6 tablespoons salted butter, melted
  • 1 teaspoon pure vanilla extract
  • 4 to 4 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1/2 of a 500g jar Cinnamon Sun River Honey, warmed slightly for easier spreading, for the filling

Directions

  1. Warm the milk in the microwave for 45 to 60 seconds. It should be warm but not hot to the touch, about 105 degrees F.
  2. Place the milk in the bowl of a stand mixer, then add 1 tablespoon sugar and the yeast. Stir and let sit for about 5 minutes, or until foamy.
  3. Add the remaining 1/2 cup sugar, melted butter, eggs, and vanilla to the mixer bowl. Use a dough hook to stir until combined.
  4. Add 4 cups flour and the salt. Mix with the dough hook, starting on low and increasing to high.
  5. Knead with the mixer or by hand until a large ball forms. The dough should be smooth and only slightly tacky. If it is too sticky to form a ball, add more flour 1 tablespoon at a time.
  6. Transfer the dough to a floured surface and knead by hand until smooth and elastic, about 3 to 5 minutes. Form into a ball.
  7. Grease a large bowl and place the dough inside.
  8. Cover the bowl with a towel and put it in a warm place to rise.
  9. Let the dough rise for about 1 hour, or until doubled in size.
  10. Sprinkle a large work surface with flour.
  11. Gently press the gas out of the dough and form it into a rectangle.
  12. Roll the dough into a 24 x 12 inch rectangle, about 1/4 inch thick.
  13. Spread the Cinnamon Sun River Honey over the dough with a spatula or knife. It is easier to spread if warmed slightly.
  14. Roll up the dough and cut into equal-sized rolls.
  15. Spray a baking dish and place the rolls evenly in the dish.
  16. Cover and let rise until nearly doubled, about 30 minutes. Preheat the oven to 350 degrees F.
  17. Bake the cinnamon rolls.
  18. Once the rolls are doubled in size, bake until golden brown, about 20 to 25 minutes. Check the center rolls to make sure they are baked through. If your oven bakes cool or unevenly, you may need to bake up to 10 minutes longer. If the top browns before the center is baked, tent the pan with foil.
